Need a Little Help w/Speedmaster decision
I'm a novice so I'm not aware of any of the benefits in the different calibrations , or if one model is more desireable than another,although it appears most members write about the Pro or Broad Arrow.
Which model of the 3 would you choose, or not choose, and why?

According to its maker it takes 14 months to make 195 individual parts and 80 hand operations to assemble. When finished it was apparent it was 50 years ahead of its time.

The Speedmaster with manual wind Lemania mvmnt is my favorite. It doesn't matter (so much) to me if it's a 321cal, 861cal or 186Xcal to me, as long as it's a manual wind Professional or Pre-Professional.
Many watch enthusiasts come to this forum and ask a similar question, many buy a Speedmaster Date or perhaps a Speedmaster Day/Date ( including me) before feeling the urge to get the real-meal-deal. I wore this watch for a number of years back in the '90's :
Typically ownership of these watches, Date, Day/Date, Reduced, or some other version of the Speedmaster line, great watches that they are, increases the interest in Omega and Speedmasters in general.
That's when you are in trouble.
You'll start reading about Speedmasters, you'll find out it was selected by NASA for it's rugged construction after numerous grueling tests. It was worn in Space by Ed White, on the Moon by Buzz Aldrin and helped save the crew of Apollo 13. It's still the only Wrist Watch approved for EVA's. This is the ICON of the Speedmaster line. The more you read and learn the more you will want one.
Then, the Wrist Watch that seemed lost in the glitter in the Display Case at your Authorised Dealer suddenly makes sense. It's understated elegance, it's superb legibility and enviable reputation for durability make it stand out. You'll try one on and well.....
The only real problem is deciding which ref# to purchase, new and\or vintage and how to make a vain attempt to limit the number to just 1 :

My first one is probably going to be a 3573 or a 3572 (bias toward the former). A red gold BA on a strap is an idea as well but that may be a bit down the road for me if I ever do it. Anyway, I can see how the bug to own more than one is easy to catch. :) Have also considered the Date and Day/Date but decided to stick with a version of the Pro as for my entry point into the spedy world.
