i believe the Watchco SM300 are "genuine" Omegas, ie there are made out of genuine omega parts. I really sees no problems with these SM300. There are correct. Sure they may not come out of the omega factory some 40 yrs ago but they are still omega watches... However to some purists, if the watch contains NOS or contains parts not original to the watch, then they wouldn't touch the watch.
in the end, do you want the watch for your own enjoyment or other people's enjoyment? If you like it, buy it, knowing that if you ever want to sell it, there will be less market as often so-called collectors will shun these watches. The way to man's heart is through the aorta

I think your first sentence says it all. If you like them thats all that matters. I actually went to Melbourne recently in the hope of picking one up, unfortunately they were/are closed on Sundays. One is definetly on my want list. They look great in the pics i've seen and imagine they would look even better in the hand...

If you like it then buy it. They are not made of NOS parts though, rather new replacement parts, so they will not be the same as an original.
The caseback numbers are different to the originals and the dials and hands use SL instead of tritium so they look different.
You will get a new looking SM300 but bear in mind the movements will be old.;-) Cheers, Neil.

...if you are looking for a long-term collectible, I would try and go for the original SM 300... You'll have to do your homework but the genuine vintage models are still extremely good value for money when compared to, say, a Rolex 5513 Sub. And in the long run, it will be the original vintage SM 300s that retain and escalate in value, not the NOS pieces no matter how spiffy and new they look. Of course, if this is not your criteria that is perfectly valid as well.
